Took a slab of a cheap cut of beef, chopped it into cubes.
Took a nice dark belgian beer.
Add beef and beer to a clay pot.
Then add chopped onion, a few cloves of crushed garlic, some olive oil, some chili sauce, salt, pepper, a couple of tablespoons of dijon mustard.

Let it marinade in the fridge all day (4-6 hours).

Add a couple of chopped tomatoes and a diced potato and pop it in the oven for a good 2 - 2 1/2 hours.

And it's got a nice kick to it. I can taste the beer. Nice flavor.

Next time need to add less beer. Half a bottle should do the trick.

    sorry, can't help you.

i'm sure chef sciency boyardee has a few tricks up his sleeve for guacamole.

oh, and don't cut the beef cubes too small. they shrink.

    I've never made guacamole Embarassed

Beef stew though I've got a handle on. Yours sounds all right. I usually go with carrots dumplings and shitloads of black pepper.
